Whole Wheat Banana Muffin

Ingredients:
  • 1/2 cup (1 stick) melted butter (or replace with canola oil)
  • 1/4 cup granulated sugar or packed brown sugar (skip if you want less sugar)
  • 2 eggs, at room temperature
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup whole-wheat flour
  • 1 cup or 3 large ripe bananas
  • 1 teaspoon vanilla extract
  • t1/2 cup walnuts, chopped
  • 1/4 cup blueberries (optional)
  • 1 teaspoon lemon or orange zest (optional)

Methods:
  • in a bowl, mix all purpose flour, baking soda, salt together.
  • whisk egg with sugar, lemon zest and vanila until lighty foamed.
  • gradually fold in flour mixture into egg. few strokes just to wet the dry mixture.
  • add banana and whole wheat flour. mix them and wet all dry ingredients.
  • do not over mix. It's ok if mixture is lumpy.
  • scope mixture into muffin cups and top each with walnuts and blueberries. lightly press nuts and berries into the mixtures.
  • bake at 350F
